Motherhood Talk Radio Hosted by Sandra Beck Welcomes the Cancer Treatment Centers of America Tuesday Sept. 11

Cancer Treatment Centers of America (CTCA) is a growing network of privately held hospitals that provide a comprehensive, fully integrated and individualized cancer treatment experience. CTCA regional destination hospitals are located in Atlanta, Chicago, Philadelphia, Phoenix and Tulsa. The CTCA growth goal is to reach more cancer patients by offering six regional hospitals located within 300 miles of approximately 80 percent of the U.S. population.

History
Cancer Treatment Centers of America was founded in 1988 by Richard J Stephenson. Stephenson was disappointed with the impersonal and insensitive cancer care his mother, Mary Brown Stephenson, received. When she lost her battle with cancer in 1982, Stephenson set out to change the face of cancer care. Stephenson’s commitment to creating a truly patient-centered cancer treatment experience has been the organization’s guiding principle ever since.

The Mother Standard®
CTCA promises that the treatment, quality of life and service needs of every patient will be at the center of the hearts, minds and actions of its staff every day. At CTCA, patients find accomplished physicians who specialize in caring for people living with advanced and complex cancer, along with experienced nutritionists, naturopathic doctors, mind-body therapists, spiritual counselors and other clinicians who provide quality-of-life support. Collectively they work to address the individual needs of patients, as if each patient was his or her own mother or loved one. They ask themselves: “If my mother had cancer, how would I want her to be treated?” That simple question has evolved into the CTCA Mother Standardof care, a unique, vibrant approach that delivers a complete, quality treatment experience based on what cancer patients and their families value most.

The Mother Standard of care allows CTCA clinicians to offer cancer patients the latest, evidence-based treatments to fight cancer, combined with a comprehensive array of scientifically supported complementary medical therapies to strengthen the immune system, ease side effects and improve quality of life.

Big Table Farm is the collaborative effort of Brian Marcy and Clare Carver.
We are a winemaker and an artist, we grow and produce what we love to eat and drink.

The farm and winery is named after their desire to provide a gracious and welcoming table for themselves and friends, with a cornucopia of hand-crafted food and wine. Ambitious as it is, they have launched a winery and are establishing a working farm, where they raise pasture poultry, pigs, cows, and egg-laying chickens. Brian and Clare also keep a large garden, working towards a managed intensive grazing system of farming that builds the soil, sequesters carbon, and moves towards a healthy, sustainable and diverse farm.

In addition to partnering with Brian to market the wine and manage their 70 acres, Clare is also a painter and wine label designer. Clare’s fine art is represented in Galleries in San Francisco and Sonoma and now in Carlton OR. Clare has designed wine labels for over 50 wineries from Oregon, California and Washington. Her labels have recieved multiple awards including america’s top ten wine labels (S.F.  Chronicle, ’06) her winery clients inculde (just to name a few) Beaux Freres, Delicato Family Vineyards, Grace Family Vineyards, Miner Family Vineyards, Patton Valley Vineyards, Resonance Vineyards, Love and Squalor Winery and Phelps Creek Vineyards.

The trio will discuss the myths and truths about emotional eating and how finding a constructive way to deal with your feelings can lead to a successful weight loss and maintenance.

Sandra and Rick will talk candidly about their successes and failures during the past two months since they have met with Rona.

When you’re happy, your food of choice could be steak or pizza, when you’re sad it could be ice cream or cookies, and when you’re bored it could be potato chips. Food does more than fill our stomachs — it also satisfies feelings, and when you quench those feelings with comfort food when your stomach isn’t growling, that’s emotional eating.

“Emotional eating is eating for reasons other than hunger,” says Jane Jakubczak, a registered dietitian at theUniversity ofMaryland. “Instead of the physical symptom of hunger initiating the eating, an emotion triggers the eating.”

Giving up cookies helps. So does swimming an extra lap or two in the pool. But no matter how religiously you diet and exercise, experts say, you’ll never make a permanent change to a healthier lifestyle without the right attitude. Elaine Wicks of Canastota, N.Y., knows that all too well. At 195 pounds, it took a major shift in how she looked at herself — and how she felt — to make a change. “Attitude, and the supportive attitude of the people around you … is such a major part of weight…

What are the telltale signs of emotional eating, what foods are the most likely culprits when it comes to emotional eating, and how it can be overcome?

How to Tell the Difference

There are several differences between emotional hunger and physical hunger, according to theUniversityofTexas CounselingandMentalHealthCenterweb site:

1. Emotional hunger comes on suddenly; physical hunger occurs gradually.

2. When you are eating to fill a void that isn’t related to an empty stomach, you crave a specific food, such as pizza or ice cream, and only that food will meet your need. When you eat because you are actually hungry, you’re open to options.

3. Emotional hunger feels like it needs to be satisfied instantly with the food you crave; physical hunger can wait.

4. Even when you are full, if you’re eating to satisfy an emotional need, you’re more likely to keep eating. When you’re eating because you’re hungry, you’re more likely to stop when you’re full.

5. Emotional eating can leave behind feelings of guilt; eating when you are physically hungry does not.

Comfort Foods

When emotional hunger rumbles, one of its distinguishing characteristics is that you’re focused on a particular food, which is likely a comfort food.

“Comfort foods are foods a person eats to obtain or maintain a feeling,” says Brian Wansink, PhD, director of the Food and Brand Lab at theUniversityofIllinois. “Comfort foods are often wrongly associated with negative moods, and indeed, people often consume them when they’re down or depressed, but interestingly enough, comfort foods are also consumed to maintain good moods.”

Ice cream is first on the comfort food list. After ice cream, comfort foods break down by sex: For women it’s chocolate and cookies; for men it’s pizza, steak, and casserole, explains Wansink.

And what you reach for when eating to satisfy an emotion depends on the emotion. According to an article by Wansink, published in the July 2000 American Demographics, “The types of comfort foods a person is drawn toward varies depending on their mood. People in happy moods tended to prefer … foods such as pizza or steak (32%). Sad people reached for ice cream and cookies 39% of the time, and 36% of bored people opened up a bag of potato chips.”

Motherhood Talk Radio Welcomes Chef Tracy Fleming of Stewart & Clark Fine Foods, January 11th

Stewart and Clark, Stewart and Clark Fine Foods, Chef Tracy Fleming, Tracy Fleming, gourmet sweets, Ocean View Sweets, Motherhood Talk Radio, Motherhood Incorporated, Sandra Beck, Christy Holly, Rick SwansonChef Tracy Fleming left L.A and her career with Nestle in their test kitchen to start her own food business in late 1997.  She opened Ocean View Sweets in 1997 with her amazing Chocolate Espresso Truffle Cookies, Cranberry White Chocolate, Peanut Butter Chip with Toasted Peanuts and Milk Chocolate Chunk, having crafted their recipes in Santa Barbara in a rented kitchen.

Tracy’s mother, Lisa Fleming, joined her shortly thereafter with a crazy notion to make Handmade Marshmallows, initially intending to sell them locally. Lisa’s long career as a food stylist (beginning at CBS in 1952) and Tracy’s experience as her assistant for many years along with 10 years as a caterer in Los Angeles gave them many skills to make their products beautiful and inviting.

In January 2000, Saveur Magazine did a piece listing them as #3 in their top 100 products of the year. Soon they heard form the New York Times, Dean & Deluca, Esquire Magazine and many others. A move in 2000 to the Santa Ynez Valley provided a kitchen of their own as their business grew.  The Food Network featured the mother/daughter team on “Food Finds” which first aired in May of 2001. Customers began calling us from almost every state in the country.

Then something happened that no one could have expected. Lisa, at the far too young age of 69, found out that she had cancer and in April of 2004 lost her valiant battle with the disease. It was very difficult for Tracy to know how to proceed. Lisa had been her inspiration for her food career and still is the single biggest influence in her path in this life of food. Ocean View Sweets wavered a bit and took a few steps back. It was 2 years before Tracy mastered the marshmallows. After much thought, great consideration and a year at the Cordon Bleu Institute in Los Angeles, Stewart and Clark Fine Foods rose out of Ocean View Sweets and began refreshed and ready for a rearranged path. The name Stewart and Clark comes from Tracy’s and her husband’s middle names. It’s simple, easy to remember and can go anywhere.

In 2009. Stewart and Clark Fine Foods moved into a new kitchen in San Luis Obispo, CA about 40 minutes North of Los Olivos; and area which they love. To honor Tracy’s mother, Stewart and Clark Fine Foods maintain “Mama Lisa” and “OVS” references everywhere. The name Stewart and Clark may be newer but the base of the company has its roots firmly planted in Ocean View Sweets and Santa Barbara County. They feel their good fortune now comes from all the groundwork of Tracy and her mother’s history.

With a book on the way, managing her catering, and co-owning Fiero Cafe with her husband, Glenn, Chef Tracy is as busy as ever, feeling fortunate to be in a great place and with the devotion to feeding her customers the best of what she can produce.  To find out more about Chef Tracy’s story, visit www.stewartandclark.com or check out their blog and Fiero Cafe specials at www.stewartandclark.tv.
